Meghalaya's Cashew Nuts
Premium Cashew are whole cashew nut kernels sourced from cashew-growing regions in India. After harvesting, the cashews are shelled and processed to remove the outer shell and skin (testa), leaving the raw kernel ready for roasting, cooking, or direct consumption.
The kernels are ivory-white to pale cream in colour, with a firm, crescent-shaped form. Cashews are graded and sorted by size during processing, and only whole, unbroken kernels are selected for packing.
They can be eaten on their own as a snack, used in cooking — curries, biryanis, kheer, and other traditional dishes — ground into pastes for gravies, or used as a garnish. They can also be lightly roasted at home for added crunch and flavour.
Store in an airtight container in a cool, dry place. In humid climates, refrigeration can help extend shelf life and prevent the kernels from turning soft or rancid.
